Happy St. Patrick’s Day!

I’m sure some of you have wild plans that involve an Irish Pub and green beer. Sadly, “wild” for me these days means staying up late enough to watch the end of Top Chef. And while I’m exposing my lameness…I’d rather eat my beer than drink it green.

But that doesn’t mean other festive libations aren’t making an appearance. Don’t you worry, I’m drinking green this St. Patty’s Day, just without the headache tomorrow. I can slam these back all night long. I know. I’m a rockstar.

Green Juice (makes about 16oz)

Ingredients:

3 cups spinach
2 granny smith apples, cored
2 kiwis, peeled
1/2 a lime, peeled

Directions:

Wash all ingredients. Cut fruit to fit into juicer if necessary. Put all ingredients into juicer and enjoy.

Green not your thing? Follow the rainbow.

Rainbow Juice (makes about 22oz)

Ingredients:

15-20 strawberries, hulled
2 oranges, peeled
1/2 lemon, peeled
2 kiwis, peeled
6 oz blueberries

Directions:

Wash all ingredients. Put all ingredients into juicer and enjoy.

Notes:

  1. The above “measurements” are very flexible. Toss in anything you’d like. Leave out items you don’t like. I intended the “yellow” in the rainbow to be pineapple, but when I cut it open it was rotten. Lemon seemed like a better choice than rotten pineapple. It worked well, but I love pineapple so much that this juice will happen again soon.
  2. I “forgot” to tell Jon there was spinach in the green juice. Ooops. Guess who drank it… and liked it? You can’t taste the spinach. I promise.
  3. If you don’t have a juicer, I’m sorry. You should post that you want one on Facebook and then your best friend sends you one for your birthday. At least that’s how it happened for me. But really, you could add ice and some fluid (water, milk, juice) to a food processor or blender and have yourself an awesome smoothie.
  4. Really? Juice? Why did she just post a juice “recipe?” To be honest, I haven’t been in the kitchen much at all this week. I’ve been consumed with the Japan coverage, watching non-stop with tear-filled eyes. My thoughts and prayers are with all those affected.
