Green Eggs and Ham

That picture up there might make you think two of us sat down to a lovely, sunlit, hot breakfast. That we talked about our plans for the day over coffee and a newspaper. I’m LOLing. That sounds so nice but let’s be real. It’s a weekday. I ate alone. Standing up. With a camera around my neck. Room temperature eggs. And no bread. That was just for show. Jon grabbed an apple on the way out the door. Yeah, that’s more like it.

We normally save eggs for weekends but today I woke up with this crazy idea in my head. I’ve told you before how throughout my childhood St. Patrick’s Day meant green eggs and ham for breakfast. This morning I was set on recreating them without food coloring. Naked green eggs and ham. Coming right up.

This might be the easiest “recipe” on this blog. It’s fun. It’s festive. Most of all it’s quick and quite good! So this St. Patrick’s day morning sit down to a plate of green eggs and ham, sip some coffee and discuss your drinking day plans, after all it is a Saturday.

Green Eggs and Ham for Two (Inspired by Mom)


4 eggs
1 cup spinach
4 large fresh basil leaves
4 slices lean deli ham


  1. Blend the eggs, spinach and basil together until smooth and green.
  2. Grease a skillet with either butter or cooking spray. Pour the mixture into the pan and cook slowly over medium heat. Using a rubber spatula pull the edges of the eggs toward the middle. Repeat until the eggs are cooked to your liking. Season with salt and pepper if desired.
    *Really just cook scrambled eggs however you want to cook them.
  3. Using the same skillet, lay the ham in one layer. Let brown for about 1 minute and flip it. Repeat till all ham is warmed and brown.



  1. You really can’t taste the spinach. Just the basil. And it’s delicious.
  2. I’m now a huge fan of blending my eggs before scrambling. They’re so fluffy!
