I’m back from the beach! I don’t want to be, but I am. Back to work. Back to routine. And soon I’ll be back in the kitchen. I haven’t been cooking much lately. That happens when you’re on vacation. I think it’s supposed to. Tortilla chips and guacamole make a fine meal when you’re laying on a pool raft…and served with a side of vodka.
So yeah, that’s why I’m sharing juice today. It’s sort of an apology to my body. I came home and made huge batches of green juice and this juice, my new favorite. Carrots, beets, lemons, strawberries, ginger.
I know what you’re thinking and I tried to hide it up there by slipping them in the middle of that list. Beets. Beet juice. She’s telling me to drink beet juice? I don’t really know how to convince you other than promising you that if it made it to this blog, it’s good. I eat and drink a lot of weird things solely for their health benefit that I don’t share here. Dandelion root tea? Have you ever had that? It’s like liquid dirt. How about arame? It’s seaweed. I actually couldn’t take more than a couple of bites. You won’t find anything like that on here because, well, it’s gross. This juice is nothing like that. It’s not “good for being healthy.” It’s really just quite good.
So trust me here and try it. I mean, look at that color. Think fruit punch. Ok, that’s a bit of a stretch but it’s tasty and super refreshing. Not to mention there’s a lot of vitamin C and antioxidants happening in that glass. So let’s make a deal. You try this and I’ll get cooking and be back soon with bacon or steak or something. Something that needs chewing. Deal? Deal.
Carrot, Beet, Berry Juice
About a 1/2 inch nugget of ginger
Wash all ingredients. Cut the rind off the lemons. Cut the greens off the tops of the beets and chop the beets if they’re too big to fit in your juicer. Save the beet green tops for something else if you’d like. I don’t like juicing them. They’re really bitter. Juice according to manufacturer’s directions. Chill and enjoy.
