  1. Preheat oven to 400. Lay the slices of pancetta flat on a greased broiling pan. Be sure they aren’t touching. Bake for about 12 mins or until crisp. Remove and let cool.
  2. Top each slice of pancetta with a couple of leaves of arugula, a slice of pear, a dollop of goat cheese and a drizzle of honey. Serve immediately.
