Enjoy!   Sausage, Peppers and Onions (adapted from Giada) Ingredients: 1 Tablespoon extra virgin olive oil 12oz-1lb Italian sausage, sliced into pieces (your choice, I used 12oz chicken sausage – see note 1) 2 red, yellow or orange bell peppers, sliced 2 large yellow onions, sliced 1 teaspoon kosher salt Freshly ground pepper to taste 1 teaspoon oregano 1/2 cup fresh basil, chopped 4 cloves garlic, minced 1-15oz can diced tomatoes 2 heaping tablespoons tomato paste 1/2 cup red wine 1/2 teaspoon red pepper flakes 1 spaghetti squash for serving (or pasta of your choice) Directions: 1. If using spaghetti squash, cut in half length-wise, clean out the seeds and place cut-side down in a baking dish with about an inch of water. Bake at 350 until the outer skin gives way a bit when pressed (about 40-50 minutes depending on the size of the squash). Remove and let cool. Scrape the squash with a fork and it should come away from the skin easily. You can make this ahead of time. 2. In a deep skillet add the oil, peppers, onions, salt, pepper, oregano, basil and garlic. Let cook for 10-15 minutes over medium heat allowing the peppers and onions to soften. 3. Add in the sausage, tomatoes, paste, wine and red pepper flakes. Cook until sauce thickens, about 10 minutes. 4. Serve over spaghetti squash, pasta or bread of your choice. side o sausage Notes 1. I used pre-cooked chicken sausage. If your sausage is raw, you may want to start by browning your sausage in the pan with some olive oil. Once brown, remove from pan and follow steps 2-4 above. 2.
