You need that.   I mixed it up a little and went for it in waffle form. I like the crispiness of a waffle but you could certainly use this batter to make pancakes. I added a few scallions, a pinch of garlic and some sweet potato puree. It’s got all the elements of a really great breakfast baked into one. It’s really something different. almond meal 1/2 cup sweet potato puree 1/4 cup water 3 eggs 1/2 teaspoon baking soda Pinch of garlic powder 6 slices of bacon, cooked and chopped |1/2 cup shredded cheddar 2 scallions, chopped 1/4 teaspoon kosher salt Freshly ground pepper to taste Directions:

  1. In a blender, combine the almond meal, sweet potato puree, water, eggs, baking soda and garlic powder. Blend until smooth and pour into a mixing bowl.
  2. Stir in the bacon, cheddar, scallions, salt and pepper.
  3. Pour the batter into a greased and very hot waffle iron, close and let cook through.
  4. Remove and enjoy! I suggest topping these with a drippy egg. Perfection!

  Notes:

  1. If you make these first, you’ll have some sweet potato puree to use. Do it!
